Expertise: Research interest include leadership and appreciative inquiry. Dr. Roofe is an Instructional Consultant with the UCA Center for Teaching Excellence. She has served as a site reviewer since 2014 with the Accreditation Council for Education in Nutrition and Dietetics. In 2013, she was recognized as a Fellow of the Academy of Nutrition and Dietetics based on her service to the dietetics profession and by optimizing the nation’s health through food and nutrition.
